Our story

Born at dawn,
in an eternal city.

Alba was born to honour Tuscan raw ingredients with the discipline of contemporary cooking. No artifice. Only time, fire, silence.

Ingredients

Selected each morning from producers in Chianti, Mugello and the Tyrrhenian coast. We know the names of those who grow and raise.

Technique

Holm-oak embers, long ageing, natural leavening, in-house fermentations. The technique is invisible, the flavour unmistakable.

One brigade, one rhythm. Service is discreet, precise, never distant.
